Japan is always a spotter-friendly place and has a large variety of trains which makes spotting a very fun activity, moreover, spotting is quite a popular hobby in Japan so you are not awkward if you do so. There are sufficient spotting locations and I really enjoyed spotting.

JR East Japan: Yamanote Line E231-500
Akihabara Station
In Japan, you can even spot trains easily at the end of platform.

JR East Japan: Saikyo Line 205-0
Omiya Railway Museum
The last 205-0 set on Saikyo Line has retired in October 2016.

JR East Japan: Yamanote Line E235
Shimbashi Station
I saw this when I was returning hostel. Although I felt great when I saw this, I didn't really like it. :(

JR East Japan: Keihin-Tohoku Line E233-1000
Hamamatsucho Station
I prefer seeing 209-0 more cuz I played it a lot in classic console game "Densha De Go!".

Keisei Electric Railway: Skyliner AE
Nippori Station
My favourite train as it is the fastest besides Shinkansen.
